Since EDD is mostly about having instant access to the files, once you purchase them, the gateways that come with the Plugin, Stripe and PayPal, will let you do just that. When using Stripe, for some countries there is an option to pay directly via your bank so that might also work for you.
There is a plugin that adds a Bank Transfer gateway. I can’t link to it here as it’s a commercial plugin but please go to Google and search for “Easy Digital Downloads – Bank Transfer Gateway” and you should see it in the results.

Why there is no developer documentation about how to crreate a custom gateway?
And I check your recommendation on that addon and your cheque payment gateway (which they got the inspiration from). I dont understand why the payment instruction is placed on the checkout page. The payment instruction should be placed on the order complete page. its what all ecoomerce platform do regarding manual payment including woocomemrce. I dont understand how you come up with that UI.
